Celebrate Mom with Avocado Toast 3 Ways

Mom’s too special to get one version of Avo-Toast, which is why we’ve created three delicious ways to surprise her this weekend.

Topped with fresh ingredients, this breakfast treat is the perfect way to say, “I love you, Mom!”

Ingredients

  • Sliced bread – try thick, crusty artisan breads, multigrain, sourdough, rye, gluten-free, whatever you prefer)
  • 1/2 ripe AvoGanic avocado
  • freshly squeeze lemon juice

Topping Idea #1

  • 1-2 fresh farm eggs, fried to the perfect crisp
  • 1 tsp freshly chopped chives
  • salt and pepper to taste

Topping Idea #2

  • slices of fresh heirloom tomato
  • a sprinkle of fresh chopped basil
  • salt and pepper to taste

Topping Idea #3

  • 2-3 slices of freshly cooked bacon (try maple, turkey, or veggie bacon for a fun twist)
  • optional: a sprinkle with goat cheese

BONUS Topping Idea #4

  • 4-5 large strawberries, thinly sliced
  • 1 tsp freshly chopped basil
  • a drizzle of balsamic vinegar
  • optional: a sprinkle with goat cheese or feta

Instructions

  1. Toast the piece of bread until the bread is just golden brown.
  2. For the halved avocado, remove the pit from the avocado and discard. Remove the avocado from the skin and place the avocado flesh into a medium bowl and mash it with a fork. Add a squeeze of fresh lemon juice.
  3. Slather the mashed avocado on top of the toast, followed by the toppings you desire.
  4. Serve immediately and enjoy!
