Ingredients

  • 1 Avoganic avocado
  • 1 slice sourdough bread (or your favorite crusty bread, GF bread)
  • 1/2 cup unsweetened almond milk
  • 1/4 cup olive oil
  • 1/4 cup avocado oil
  • 1/4 cup water (or more, as needed)
  • 1 celery rib, chopped
  • 1 scallion, white + green parts, chopped
  • 1 clove garlic
  • 1/2 fresh mango, chopped
  • 1 T apple cider vinegar
  • juice of 1 lime
  • 1/2 tsp sea salt
  • Optional: fresh chilies to taste

Instructions

Combine all ingredients in a high-powered blender and blend until very smooth and silky, adding a little more water as necessary to reach desired consistency. Chill or enjoy at room temp; serve topped w/ more olive oil and mango, cilantro, and fresh chilies.
